Mediterranean Pizza – As Seen on Restaurant: Impossible

YIELDS THREE 12” PIES

YOU’LL NEED

FOR THE PIZZA DOUGH
5 ¼ cups bread flour
2 tbsp plus 1 tsp sugar
1 ¾ cups cool water
¼ cup extra virgin olive oil
1 tsp active dry yeast
2 tsp fine sea salt

FOR THE BRAISED BEEF
1 lbs 80/20 ground beef
1 cup canned roasted red peppers, diced
1 white onion, diced
3 garlic cloves, thin sliced
2 cups canned tomato sauce
Kosher salt and black pepper, to taste

FOR THE TOPPINGS
1 cup crumbled feta cheese
18 cherry tomatoes, halved
2 cucumbers, diced
1 bunch fresh parsley, chopped
3 tbsp grapeseed oil
2 tbsp red wine vinegar
Kosher salt and black pepper, to taste

FOR THE LEMON YOGURT SAUCE
1 cup plain Greek yogurt
Juice and zest of 1 lemon
1 clove garlic, minced
Kosher salt and black pepper, to taste

MAKE IT

PIZZA DOUGH
1) Using a mixer with a dough hook, mix all ingredients except the yeast and salt. Once mixed, sprinkle with yeast.
2) Mix the dough on low speed for 5 minutes or until everything is tacky, stopping to scrape sides of bowl as needed. Increase speed to medium-low and mix for 4 more minutes or until dough clings to dough hook. Add salt and mix an additional 5 minutes or until dough is soft, stretchy, and resilient when poked.
3) Transfer dough to a clean work surface. Cut into 5 pieces—each about 8oz. Mold the portions into tightly formed balls. Squeeze each ball near bottom to eliminate any big air pockets. Gently roll on surface in a circular motion to create a smooth, tight ball. Place dough on a baking pan. Cover tightly with plastic wrap and refrigerate at least 4 hours or up to 2 days. Freeze the 2 extra dough balls for future use. Let the 3 dough balls being used rest— covered at room temperature for 30 minutes—then stretch the dough.
4) Pre-heat oven to 400 degrees F.
5) Using a rolling pin, roll the 3 dough balls into a 12 inch circles, 1/8 inch thick.
6) Place dough into a 400° oven either on a pizza stone, or in baking sheet and cook for 5 minutes. Just cook through. You do not want to get any color on the dough.
7) Pull dough from the oven and allow to cool.

BRAISED BEEF
1) Take a sauce pot over medium heat add the ground beef. Take a wooden spoon and break up the meat. Continuously stir the meat and allow to cook over medium-high heat for 6 to 8 minutes until cooked through.
2) Add the roasted red peppers, onions, and garlic.
3) Stir and allow to cook for another 5 minutes.
4) Finish by adding the tomato sauce. Stir and bring mixture to a simmer and season with salt and pepper, to taste.

LEMON YOGURT SAUCE
1) In a large mixing bowl add the yogurt, lemon zest, lemon juice, and garlic. Season with salt and pepper to taste.

PIZZA
1) Pre-heat oven to 500 degrees F.
2) Place ½ cup of the roasted red pepper braised beef onto each partially-cooked pizza crust. Top with ¼ cup of feta cheese and place oven for 8 to 10 minutes.
3) While the pizza is cooking, place the cucumbers, tomatoes, parsley, and Parmesan cheese into a mixing bowl. Dress with the grapeseed oil, red wine vinegar, and season with salt and pepper.
4) Remove the cooked pizza from the oven and garnish with the tomato and cucumber salad mixture. Last, drizzle the lemon yogurt sauce overtop and serve.
