Alfredo Bacon Burger – As Seen on “Restaurant: Impossible”

From the Episode “Not So Peachy Keen”

Serves 4

YOU’LL NEED

FOR THE ALFREDO SAUCE
1 tbsp grapeseed oil
1 tbsp butter
1 white onion, diced
3 cloves garlic, minced
½ cup white wine
2 cups milk
2 cups heavy cream
2 tbsp grated Parmesan cheese
Salt and pepper, to taste

FOR THE GARLIC AIOLI
½ cup mayonnaise
1 garlic clove, minced
½ lemon, zested and juiced
1 tbsp parmesan cheese
1 tbsp chives, chopped fine
1 tbsp fresh parsley, chopped fine
Salt and pepper to taste

FOR THE BACON BURGER
4 brioche burger buns
1 tbsp grapeseed oil
1 tbsp butter
12 slices bacon
4 beef burger patties (6 oz each)
1 cup cherry tomatoes
2 oz arugula
16 oz French fries
Salt and pepper to taste

MAKE IT

ALFREDO SAUCE
1) In a large saucepot add grapeseed oil, butter, and white onions and allow to sweat for 1 minute.
2) Next, add garlic and cook for approximately 3 minutes.
3) Then deglaze with white wine and cook for approximately 3 minutes.
4) Add milk, heavy cream, and grated parmesan cheese.
5) Bring sauce to a hard simmer, then turn down to a low simmer and cook for approximately 15 minutes.
6) Using a hand blender (or countertop blender) carefully puree the sauce for 30 seconds until smooth.

GARLIC AIOLI
1) In a large mixing bowl add mayonnaise, garlic, lemon zest, lemon juice, parmesan cheese, chives, and chopped parsley.
2) Mix all the ingredients together and season with salt and pepper.

BACON BURGER
1) Pre-heat an oven to 350-degrees
2) Place bacon on a baking sheet, place in the oven and allow to cook until bacon is golden brown and crisp. About 10 minutes.
3) In a large skillet over medium heat add grapeseed oil, butter, and the brioche buns, and toast until golden brown.
4) Remove buns from the pan and set aside.
5) Next season hamburgers with salt and pepper.
6) Place in the same skillet over high heat. Sear the burgers on both sides, approximately 3 minutes on each side for medium-rare.
7) Remove burgers from the pan and set them aside.

PLATING
1) Dress the top and bottom buns with garlic aioli.
2) Place the seared burger the bottom bun, top the burger with roasted bacon, cherry tomatoes, and arugula
3) Cook French fries in a 350-degree fryer and cook until golden brown.
4) Serve the burgers with French fries, and alfredo sauce on the side.
