Red Onion Marmalade
Ingredients
3 EACH RED ONION, 1 INCH THIN JULIENNE
2 OZ HONEY
3/4 CUPS SUGAR
1/2 CUP WATER
1/2 CUP RED WINE VINEGAR
1/2 CUP RED WINE
1 TSP BLENDED OIL
SALT AND PEPPER TO TASTE
Method
SAUTE THE ONIONS OVER MEDIUM-HIGH HEAT TILL LIGHTLY CARAMELIZED.
TURN HEAT TO HIGH AND ADD THE HONEY, SUGAR, WATER, WINE AND VINEGAR. TURN DOWN HEAT.
SEASON W/ SALT & PEPPER
REDUCE DOWN VERY CAREFULLY TO A SYRUPY MARMALADE CONSISTENCY. DO NOT BURN!
