Benne Crusted Halibut – As Seen on Restaurant: Impossible

From the episode, “Stalled on the Runway”

SERVES 4

YOU’LL NEED

FOR THE BACON & PEA SALAD
12 oz bacon, diced
1 onion, diced
1 cup sweet chili sauce
2 tbsp rice wine vinegar
1 tbsp honey
4 cups English peas (frozen is fine)
Salt and pepper

FOR THE MINT YOGURT
2 cups plain Greek yogurt
1 tbsp lemon juice
1 bunch mint, chopped
1 tbsp grapeseed oil
Salt and pepper

FOR THE WHITE GRITS
3 cups whole milk
1 cup white grits
3 tbsp cream cheese
1 tbsp butter
¼ cup shredded cheddar cheese
Salt and pepper

FOR THE FISH
4 halibut filets (6 oz each)
2 cups all-purpose flour
4 eggs
1 cup sesame seeds
2 cups panko breadcrumbs
1 bunch mint, picked and chopped

MAKE IT

BACON & PEA SALAD
1) In a medium sauté pan add bacon and allow to cook over medium-high heat for about 3 minutes.
2) The bacon should be light brown in color and crispy.
3) Add onion and cook for approximately 3 more minutes.
4) Add sweet chili sauce, rice wine vinegar, and English peas. Set mixture aside.

MINT YOGURT
1) In a mixing bowl add Greek yogurt, lemon juice, mint, and grapeseed oil.
2) Use a whisk and mix ingredients together. Season with salt and pepper.

WHITE GRITS
1) In a medium sauce pot add milk and bring to light boil.
2) Using a whisk, slowly incorporate grits.
3) Allow the grits to cook for 10 minutes over a low simmer, making sure to continuously stir.
4) Next remove the grits from the heat and add cream cheese, butter, and cheese.
5) Season with salt and pepper.

SESAME-CRUSTED FISH
1) Pre-heat a tabletop fryer or an air fryer to 350 degrees.
2) Take three separate bowls. In one add the all-purpose flour. In the next one place the eggs. And in the third bowl place the sesame seeds and panko breadcrumbs.
3) Season the halibut filets with salt and pepper. First place them in the bowl which contains the all-purpose flour. Remove them from the flour and put them in the bowl containing the eggs. And finally place them in the bowl containing the sesame and panko breadcrumbs.
4) Place the breaded fish in the deep fryer and cook for about 5 minutes or until golden brown with an internal temperature of 145 degrees.

PLATING
1) Place a spoonful of grits in the center of the plate.
2) Place the pea and bacon mixture on top of the grits.
3) Top the peas with the fried fish.
4) Finish with the herbed yogurt and chopped mint.
