Vanilla & Peach Compote Topping
Ingredients
3 cups sliced peaches
1/4 cup apple juice
1 cinnamon stick (optional)
1 tsp vanilla extract
1/2 lemon, juiced
1 tbsp honey
dash salt
Method
PLACE ALL INGREDIENTS TOGETHER INTO A SAUCE POT AND BRING TO A SLIGHT SIMMER OVER MEDIUM HEAT. TURN DOWN THE HEAT TO LOW-MEDIUM AND CONTINUE TO GENTLY STEW THE COMPOTE WHILE STIRRING FOR 5 MINUTES. REMOVE FROM HEAT. SEASON WITH A DASH OF SALT TO BALANCE OUT THE FLAVOR AND ALLOW TO CHILL DOWN TO ROOM TEMP.
