Ingredients

FOR THE PULLED PORK
8 lbs pork butt, bone out
1 tbsp smoked paprika
1 tsp Cajun spice
1 tsp ground cumin
4 oz BBQ spice
2 qts Memphis style BBQ sauce (reserve 2 oz for garnish)
Salt and pepper

FOR THE THOUSAND ISLAND SAUCE
½ cup ketchup
½ cup mayonnaise
2 tbsp hot sauce
1 tsp Cajun spice
Salt and pepper

FOR THE SANDWICH
4 brioche buns
2 tbsp grapeseed oil
1 tomato, thinly sliced
1 cup shredded iceberg lettuce
8 thin slices dill pickles
16 oz French fries


Instructions

MAKE IT

PULLED PORK
1) Pre-heat oven to 325 degrees.
2) Rub pork generously with smoked paprika, Cajun spice, ground cumin, BBQ spice, salt, and pepper liberally.
3) Place pork butt in a roasting pan. Cover with tin foil and place in the oven for approximately 3 hours.
4) Using your hands or fork pull cooked pork.
5) Dress the pulled pork with Memphis style BBQ sauce.

THOUSAND ISLAND SAUCE
1) In a mixing bowl add ketchup, mayonnaise, and hot sauce.
2) Whisk together. Season with salt and pepper.

PLATING
1) Pre-heat a deep fryer or air fryer to 350 degrees.
2) Place French fries in the fryer and cook for about 4 minutes or until golden brown.
3) In a pan over medium heat add grapeseed oil and toast the brioche bun.
4) Dress the bun with Thousand Island dressing. Top the bun with pulled pork.
5) Top the pulled pork with sliced tomatoes, lettuce, and pickles.
6) Serve the sandwich with French fries.
