Warm Bacon Vinaigrette

Ingredients

1/2 LB LARGE DICED SLAB BACON

1/2 CUP CIDER VINEGAR

2 TBSP BROWN SUGAR

2 TBSP WHOLE GRAIN MUSTARD

6 TBSP CANOLA OIL

6 TBSP RENDERED BACON FAT

2 TBSP MAPLE SYRUP

SALT AND PEPPER TO TASTE

Method

RENDER THE LARGE DICED BACON WITH THE CANOLA OIL. SAVE THE OIL & BACON FAT. IN A VITA PREP OR BLENDER, COMBINE MUSTARD, VINEGAR, BROWN SUGAR AND HONEY. BLEND ON HI AND SLOWLY POUR IN THE OIL, BACON AND BACON FAT. SEASON WITH SALT AND PEPPER AND LEFTOVER COOKED BACON PIECES.
